Here are the recipes I use: Quince Jam 2lbs Quinces, prepared weight 1 1/2 pints water 2 tbspns Lemon Juice 3lbs Granulated or preserving sugar Peel, core, slice and weigh quinces. Place in pan with the water and lemon juice, then simmer very gently with the lid on until really soft and mushy. Reduce a little if needed by boiling with lid off. Add the sugar and stir well until dissolved, then boil rapidly until setting point is reached. Pot and cover in usual way. Quince Jelly 4lbs quinces water to just cover 3 tbspns lemon juice Silver Spoon Jam Sugar Wash quinces then cut up into small pieces, no need to peel or core, but cut out any bad pieces. Simmer, without lid until fruit is really mushy (about 1/2 hr - 1 hr). Strain overnight through muslin into a bowl, then measure back into washed pan. For every pint of juice add 1lb Jam Sugar and stir over very low heat until dissolved. Bring to rolling boil and boil for 4 MINS ONLY. Pot in usual way.
